Ingredients:
1.5 cup flour
1/2 cup sugar
1/4 cup maple syrup
1 cup soy milk
1/4 cup vegan butter
2 tsp ginger
1 tsp nutmeg
1 tsp cinnamon
1 cup dried blueberries
Directions:
1. preheat oven to 350
2. mix ingredients together and spread out on pan
3. bake for 20 min
These would be perfect for a mid day snack with some tea. They werent too sweet and suprisingly the ginger and blueberry complimented each other quite nicely :)
Blueberry has always been my favorite!!

ReplyDeleteI really like this recipe and the banana nut muffin recipe. Both recipes seem simple enough for almost anyone to follow.

ReplyDeleteWhat tea goes with Ginger and Blueberries I wonder(?). I'd make these if I knew a good pairing.
ReplyDeleteTastes great! One of the better recipes I've come across through Google. Try adding some finely-diced raspberries to the batter mix. It's tasty!
