vegan lemon squares!

Crust Ingredients:
1/2 cup earth balance
3 tbs stevia
1 cup unbleached all-purpose flour
1/4 cup vegetable oil
1 tsp vanilla extract
1 tsp dark molasses
Filling Ingredients:
1/2 cup silken tofu (soft or firm)
1/4 cup stevia
1/4 cup honey
Zest from 2 lemons
1/2 cup fresh lemon juice (2 to 3 lemons)
2 Tbsp unbleached all-purpose flour
2 tablespoon cornstarch

Preheat oven to 325 deg
To make crust. mix in the butter, flour, oil, and sugar until it becomes slightly crumbly
press mixture into pan and bake for 15 min or until lightly brown
to make filling: put tofu, sugar, and lemon juice in food processor and blend till creamy
blend in cornstarch and flower
pour filling over crust
bake for 25 minutes (or until filling is set)
wait for 10 minutes and then cut into squares
The lemon part came out thinner than i wanted, so if u want a deeper filling, i would just double the amount! easy easy stuff :)

  2. Pardom me for salivating,you know Lemons uuummm. I use stevia for my coffe but some times i get Organic Vegan Sugar fron The Whole Food Market,have you ever try it?.....
