vegan blueberry muffins




I have heard alot about earth balance (which is a non dairy butter) and stevia (an all natural sugar substitute) and I have always wanted to bake with it. I finalllly got my hands on some and I could not wait to start baking!
I found this recipe for vegan blueberry muffins and here goes!!

vegan blueberry muffins:
makes about 12 muffins

Ingredients:

1.5 tbs margarine
1/4 cup applesauce
1/6 cup of stevia (natural sweetener)
1/4 cup agave nectar syrup
1/4 cup canola oil
1 cup all baking flour (i used the non gluten flour)
1 tbs of baking powder
1 tsp vanilla extract
1/2 cup soymilk
2 cups blueberries

Directions:

1. preheat oven to 350 deg
2. mix all the ingredients
3. put in cupcake tins
4. bake for 35 minutes
I loved the way they turned out!! I dont like my muffins to taste too heavy or buttery, and these tasted pretty good. the muffins itself werent that sweet, but the blueberries made up for it.

OK let me get this straight, now that you are McDonald's spoke person,this means you can go to any Mekey D's and get free nuggets?,aewsome!!! he he.Maybe they can include some of your recipes in their menu,they have some stores with special menus,can you imagin,a Spam and Eggs Breakfast Burrito, it will be a big hit back home he he.Congratulations!!
