pumkin spice cookies!




Had some pumpkin left over in my fridge and I didnt know what to do with it, so I decided to make cookies out of it. Going from my macaroons made out of saltine crackers, I wanted to try it out more this time using pumpkin and lots of cinnamon. I didnt really follow instructions, nor did I really measure out anything, so sorry if my measurements are sort of wrong.

Ingredients:
30-40 saltine crackers
1 cup of rolled oats
1.5 cups of canned/pureed pumpkin
.5 cups of sugar/sweetener
2/3 cups of vegetable oil
2/3 cups of hazelnut milk (or any non dairy milk)
2 tbs of cinnamon
1 tsp of ginger
1 tsp of nutmeg
.25 cup of honey
2/3 cup of maple syrup
a package of meltable chocolate
(optional) chopped walnuts and toffee

Directions:
1. crush the saltine crackers and mix with oats
2. add in the cinnamon, nutmeg and ginger
3. add in pumpkin (just keep folding over and mixing in the ingredients)
4. add the maple syrup, honey, milk, and oil
5. mix it allllll together and it should look like cookie dough (taste it. i thought it needed more cinnamon, ginger etc so i just tasted and added. i think i added more pumpkin to it too)
6. lay out on baking sheet (cover it with cooking oil first)
7. bake for 20 min
8. melt chocolate ( i dipped half of them, and i drizzled chocolate on the other half just to change it up.)
9. let chocolate cool and ENJOY :)

  1. I love anything with pumpkin,pie,icecream,bread and this cookies look delicius.The only problem i got is ,when you said it was left over pumpkin in your fridge,is that from November? he he just teasing...
