macadamia nut coconut blondies



Ingredients:
2 3/4 c all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
6 oz. silken tofu
1/4 c soy milk
1/3 c oil
1/2 cup stevia
2 tbsp vanilla extract
1 1/4 c raw macadamias,
1 1/4 c coconut
1/4 cup maple syrup
1/4 cup agave nectar

Directions
Preheat oven to 350F. Grease 9 X 13 inch pan.
In blender or food processor, blend tofu and soy milk until smooth.
Add oil, sugar and vanilla, blend.
Combine the dry ingredients in mixing bowl, mix well. Fold in nuts and cocnut
Dough will be thick. Spread in baking pan, bake 25 minutes.

Coconut frosting:
Ingredients:
2 cups soy milk
1/6 cup stevia
1/4 cup maple syrup
2 tbs molasses
2 tbs cornstarch mixed with 1/4 cup water to form paste
2 cups coconut
1 tsp vanilla

1. in saucepan mix together soy milk, stevia, molasses, maple syrup, and vanilla
2. cook over medium heat until mixture is hot, then add in the cornstarch paste until it thickens
3. let cool, then add the coconut flakes in food processor until it becomes a frosting texture!

I LOVEEE blondies and i was craving them at the time, so i made em! :) they came out very moist, chewy and pretty good...Again, they didnt taste too sweet, so if you have a sweeter tooth, then i would add more sugar

    I'm cooking Italian for my wife, daughter and son-in-law for Mother's day. Made the sauce, & meatballs Sat. night. Pasta tomorrow.

  2. Wow!!! The bottom pic looks like a prehistoric Crocodile,the eyes,the nostrils and the fangs showing true the mouth ha ha ha. But don't matter, I still eat it. Mich, I made the macaroons with a little twist,I diped halve of it in chocolate and the other halve in white cocolate in an angle,they were a hit,50 of them gone in minutes,I wish I could send you a pic,keep those recipies coming, Ciao...

    You know what else would be awesome? If you helped push for a healthy revamping of the McDonald's menu. You've seen the power and benefit of what some would call "alternative ingredients." Perhaps that would be a worthy cause in your new partnership.
