coconut walnut cake with coconut frosting :)



coconut walnut cake

3/4 package of silken tofu
1/3 cup stevia
2 cups coconut milk
2 1/2 cups coconut flakes
1 cup canola oil
4 cups all purpose flour
1.5 tsp baking soda
1.5 tsp baking soda
2 tsp cinnamon
1 cup chopped walnuts

1. preheat oven to 350 deg
2. place tofu, sugar, coconut milk, coconut flakes, and oil in blender and puree until it becomes thick and uniform in texture.
3. mix in the flour and add in cinnamon, walnuts, baking powder and soda
4. pour batter in greased pan. batter should be thick.
5. bake for about 75 minutes
6. cool for about 15 minutes before adding frosting

coconut frosting
2 cups soy milk
1/6 cup stevia
1/4 cup maple syrup
2 tbs molasses
2 tbs cornstarch mixed with 1/4 cup water to form paste
2 cups coconut
1 tsp vanilla

1. in saucepan mix together soy milk, stevia, molasses, maple syrup, and vanilla
2. cook over medium heat until mixture is hot, then add in the cornstarch paste until it thickens
3. let cool, then add the coconut flakes in food processor until it becomes a frosting texture!

I like this frosting because it isn't obnoxiously sweet, but still is very coconutty. overall, the cake was pretty moist and i loved it cuz it wasnt too sweet. :)

  1. This looks huge! Whose going to eat all this stuff your cooking? Bring some into the locker today, maybe the girls will appreciate the home cooking.
