The Marshmallow Experiment

I don't know what marshmallows exactly are, but they sure are delicious! Perfectly fluffy, creamy, and sweet, marshmallows are awesome. Browsing through pinterest, I came across pictures of cookies incorporating marshmallows in their recipes. It was very "smore-like" and it looked too delicious NOT to try. So I went to the market and bought the biggest bag of marshmallows they had. I had this gluten free cookie mix lying around in my pantry so I thought why not add marshmallows to them.

The marshmallows did harden a little bit when taken out of the oven creating a slight crater in the cookie, but it almost formed a caramel like texture when cooled. It was amazing.



I made marshmallow topped choc chip cookies for half the back, but decided to make a cookie bar for the remainder of the batch.



Directions:

Simply just follow the directions for the gluten free cookie mix, but i substituted earth balance "butter" for the butter and used energ-e egg replacer instead of the egss. You can also add some vegan cream cheese to make it extra creamy.

To make cookies:

form dough on pan and place marshmallow on top

To make cookie bar:

Simply divide the dough in half and layer the marshmallow in between the two layers of cookie dough.

I baked the cookies in 350 deg heat for about 12 minutes and left the cookie bar for an additional 10 minutes. :)


Pair with coconut milk chocolate ice cream to make the perfect combination!!

Yellow chevron tipped nails


Been loving the chevron trend these days and just couldn't wait to apply it to my nails this week. Yellow is one of my favorite colors and i love having such a bright color on my fingers because it instantly makes me happy when I look down. Also I think the chevron tips are a much cooler version of the original french tips.

I LOVE NAIL ART! Why you ask? I love it because its fun, its unique and your nails are like mini-canvases where you can paint on. Even though I love a manicure from time to time, nail are gets very pricey. When I went to Japan this year, I walked into a nail salon and asked them how much it would be to get my nails done with the fancy nail art. They said that it would be around 20 dollars a nail making it 200 dollars for both hands!! I was astounded at the price and as soon as I came back to the states, I bought myself a gel nail kit with a UV lamp. With all the supplies added up, it came out less than half the price of one manicure in Japan. After getting my own kit, doing my own gel nails have been my new favorite thing to do! Although it takes me quite a long time to do my nails (about 2 hours), it is quite relaxing to do while watching a movie or listening to music. Here is some of my nail designs :)

Deep fried mochi with azuki filling

When I am tired, I crave sweets and deep fried foods, so frying the mochi seemed like a great idea to me. And I was right! It was soo delicious and takes the ordinary microwave mochi to a WHOLE new level. But I guess the deep fryer will do that just about anything huh? Anyways, this was not my healthiest dessert made, but it still was gluten free and vegan. I also added green tea matcha powder to the mochi mix so it had a nice green tea aroma to it.

   


Here is the recipe! Enjoy :)

Ingredients:

1.5 cups of mochiko (sweet rice) flour
1.25 cups of unsweetened soy milk
1 cup of sugar (I used stevia instead)
1 tbsp of matcha (green tea) powder

azuki beans to fill the mochi (you can get pretty creative with the fillings. I have used chocolate, fresh blueberries, and other ingredients before and all turned out good.)

1. In a large mixing bowl pour in ingredients
2. mix for about 3 minutes
3. if you have a deep fryer, follow the instructions and heat to recommended temperature
4. pour out mochi minxture into microwavable bowl and cook in microwave for 3 minutes
5. take out and let cool until you can touch it. (Careful handling the mochi! I have burnt my fingers before!)
6. when cool enough to handle, take small portions of the mochi and stretch it out. scoop in the azuki beans and form a dumpling like shape
7. you can roll these dumplings in sesame seeds if you like
8. take out of fryer when it looks like it is crispy enough.

9. Let cool before enjoying :)

outside lands..

Was such a nice day to spend a sunday after a good long week of practice. i have never been to a music festival before and this was a truly an amazing experience. the music was great and the people were awesome!! LOVE san fran

ginger blueberry snack squares



Ingredients:
1.5 cup flour
1/2 cup sugar
1/4 cup maple syrup
1 cup soy milk
1/4 cup vegan butter
2 tsp ginger
1 tsp nutmeg
1 tsp cinnamon
1 cup dried blueberries

Directions:
1. preheat oven to 350
2. mix ingredients together and spread out on pan
3. bake for 20 min

These would be perfect for a mid day snack with some tea. They werent too sweet and suprisingly the ginger and blueberry complimented each other quite nicely :)

Gooey banana nut muffins



Ingredients:
1.5 cup flour
1/2 cup sugar
1/4 cup maple syrup
1 tsp baking powder
1.5 tsp cinnamon
4 bananas
1/2 cup chopped walnuts
1/4 cup vegan butter
3/4 cup soy milk

Directions:
1. heat oven to 350 deg
2. mash up bananas and add to dry mix
3. mix ingredients together
4. bake for 40 minutes

These were probably the best muffins i had made. they were crispy on top and really gooey in the middle. yayy! muffins were a success :)

Gotta love Indian food! Love curry and that naan bread is to DIE for. Indian food has to be one of my favorite food. Went to go eat at this restaurant one too many times last week.

held up the brush again in my hand and it felt glorious. it was fun to take an afternoon listening to music while painting. took my mind off everything and i love how these kinds of activities just really reset my buttons.

was listening to iamamiwhoami while painting. these videos are so genius and so creative. i love it.

I am extremely disappointed in how I played this past week, but the only thing I can do now is to move forward and to work harder. I am excited for a good week of practice at Nemacolins Resort and I am looking forward to play in the Evian Masters and the British Open!
