pumpkin frozen yogurt pie




I love pumpkin frozen yogurt so why not make it into a pie right? its a colder version of a regular pumpkin pie. And again, i made this pie without using butter and eggs.

Ingredients:
crust:
1/4 cup soy flour
1/2 cup oat flour
3 bananas
1/3 cup vegetable oil
1/3 cup water

Filling:
1 pint of non fat yogurt
1.25 cup of cooked pumpkin (or canned pumpkin)
1/3 cup of splenda (or sugar)
1 tsp of cinnamon (or more...do it to taste. i put in ALOT of cinnamon)
1/2 tsp of ginger
1/2 tsp of nutmeg

pecans to garnish

Directions
1. mix in the bananas, flour, and add in the vegetable oil and water
2. flatten out into pie tin and bake for 12 min (preheat oven to 350 deg)
3. mix in the pumpkin, frozen yogurt, sugar, cinnamon, ginger, and nutmeg
4. pour mixture into the pie and put in freezer
5. let freeze overnight
6. thaw before eating

  4. Hoy, Michelle, I've got an idea. Of course it's contingent on whether or not you actually like Liliha bakery...

    Well, I'm thinking that it'd be neat if you could replicate their chantilly frosting using your alternative ingredients. Their recipe is supposedly a secret, but I'm pretty certain they use dairy products.

    Not only would it be a valuable yet entertaining endeavor (well certainly entertaining, not sure how valuable except for the sake of yumminess), it would probably be another thing to remind us of home while we're stuck in the bay area - besides those random honu/island car stickers, that is.

What a mess to make Jello versions, I had a good friend tell you about some lemon-filled version,triple theat good for decision-making they say, keeps nerves on distance to object as if you were looking through a glass object and not a picture of pumpkin, I can guess lemon apple-apple french cuisine also.
    Texture is great. Love it!!
